Chef Carlos Salgado offers consulting to chefs, restaurants, and individuals interested in a closer connection to masa, tortillas, and maíz. He has helped restaurants of all sizes, in the US and abroad, start their own in-house masa programs, from selecting a molino to sourcing corn to perfecting masa shapes, developing menus, and troubleshooting. Consulting is available in person and remotely.
